Traditional cuisine in Bibione

Hit the restaurants and plunge into a world of mouthwatering Veneto specialties

Local ingredients and traditional dishes

Want to sample the Veneto cuisine at its best? Bibione is one of the places where you can make a memorable gastronomic experience. The lagoon, the sea, the land – they have gifted the place with a vast array of key ingredients: fish and seafood, meat and dairy, fruit and vegetables. At the hands of skilled chefs, these fixings turn into lip-smacking dishes. If you cross the threshold of the local restaurants, or, even better, go on a gourmet tour in the region, your taste buds will go wild.

The freshness of the ingredients is guaranteed, thanks to the Agricultural Cooperative (founded in 1959) which sells here its produces, in its local store. The stalls dripping with cheeses and honey, sausages and fruit, are complemented by local DOC wines.

White asparagus, a symbol of the local cuisine, is held in great respect: it flatters a large variety of plates, as chief ingredient or as a final touch in simple uncomplicated salads, risotto, creams, meat based dishes. It is grown throughout the spring season, and the local restaurants try to make the best of this moment. Starters, first courses and second courses take on the color and flavor of the highly esteemed vegetable.

Fish is ever-present: the Bibionesi use a lot of oily fish (they call it blue fish), including mackerel and sardines. Needlefish is also on the table. Savor it grilled. Or try the superb sarde in saor (fried sardines dipped in vinegar with fried onions, pine kernels and raisins), or the hearty bigoli in salsa (pasta with anchovies). The so-called boreto de pesce (stew with a mix of fish species) and brodo di go (broth with goby) can make for an excellent first course. All you have to do is hit the restaurants and let the food come to you.

Wine tradition

Crown your meals with an exquisite wine label. You have plenty to choose from: Merlot, Cabernet, Pinot Bianco, Verduzzo, Refosco dal Peduncolo Rosso and Sauvignon. Fortunately, the local cuisine goes very well with the regional wines. You’ll also have the guarantee you’ll only sip on authentic wines, since the inland production is supervised by an organization that protects the authenticity and quality of the labels.

Lison-Pramaggiore wines are the pride of the region. Whites, reds or rosés, they will grace your meal and turn you into an epicure that knows how to make the best of their plates.
